How To Make Coxinha (Brazilian chicken croquettes) and Catupiry The Best Recipe
This coxinha recipe is very easy to make! you can find the the Catupiry recipe as well ( Brazilian creamy cheese) or you can use the Philadelphia Cream cheese if you like or just the chicken. Maybe you can make a vegetarian version with mushrooms? <br />

Coxinha recipe<br />
<br />
Dough<br />
<br />
1L of water<br />
150g butter<br />
1 Tbs salt<br />
500g all-purpose flour<br />
<br />
Filling<br />
<br />
Oil to sautรฉ<br />
500g cooked and shredded chicken breast<br />
1 whole garlic <br />
1 bunch parsley<br />
1 tsp paprika<br />
Salt and black pepper to taste<br />
Brazilian creamy cheese to taste, you can add cream cheese instead<br />
<br />
To bread<br />
1 egg<br />
2 cups of milk<br />
Oil (enough to deep fry)<br />
1 cup Panko <br />
<br />
For the Catupiry (optional) <br />
1L whole milk <br />
1 Tbs vinegar <br />
2 Tbs butter<br />
Salt 3 pinches<br />
<br />
Dough<br />
In a pot, add the water, salt and butter. <br />
Once the butter is melted, add the flour (1 cup at the time) and mix well. <br />
Remember to keep the heat of your stove medium to low. <br />
Keep mixing until you have a smooth and silky dough. The dough is ready when it stops sticking on the bottom of the pan. <br />

Filling<br />
<br />
Boil and then shred the chicken.<br />
Mince the garlic, chop the parsley. <br />
In a large sautee pan, add 1 Tbs of canola oil, sweat the garlic. <br />
Add the shredded chicken, add salt and black pepper. <br />
Add the creamy cheese (cream cheese) and keep mixing until all incorporated. <br />
Add the parsley. <br />
